Chicken Pesto Pasta and Spinach Squash Pizza

Last night, I was thinking about dinner and the very small amount of chicken left in the fridge from shabbos. I knew it wasn't enough for both myself and my husband, but I really didn't want it to go to waste either.

A while back, I'd found a recipe for pesto chicken pasta. Pesto + chicken + sliced black olives + pasta. I made it once using leftover grilled chicken, and haven't made it since. But it's a really yummy recipe, and I don't make it nearly often enough.
So I made it last night. It was SUPERB and easy.

Then tonight, I thought briefly about making rice and beans, which is one of our staple dinners, but then I remembered it was the night before a fast, and I had fresh spinach in the veggie drawer that I wanted to use.

And it's been so long since I made pizza.

So pizza it was.

With spinach and mushrooms and butternut squash (which was also hanging out in the veggie drawer for a while) and light sprinkling of mozzarella.

I was drooling over your cupcakes when I noticed that you'd posted a recipe. I got exciting, thinking it was a cupcake recipe. I skipped over the title of said recipe, and was shocked and horrified when to find that the first ingredient in your beautiful baked goods was...pasta. That'll learn me not to skim things.

Things are heating up here on the East Coast, and the humidity doesn't help. So this week for shabbos, I decided to try my hand at a simple sorbet. Pesto, Presto!

Earlier this week, I found a recipe that caught my eye for two reasons: 1) Delicious looking picture and 2) The instructions consisted of one line. "Mix together all ingredients and serve." How could I resist? I'll tell you. I couldn't. The recipe was for Chicken, pesto and pasta salad . Sounds amazing, right? Click the link. Really. See that picture? Ultimate Challah Success

Some of you may remember that last week I made a challah recipe given to me by my friend's chosson. I mentioned that I wanted to try it with more yeast and sugar and maybe some vanilla. Well, that's what I did tonight. I added 1/2 cup of sugar, used the whole packet of yeast instead of 1 tsp, added 1/4 cup of honey and a tablespoon of vanilla. I also added extra water and flour in an attempt to use enough flour to say a bracha on separating the challah, but since I wasn't sure if I used enough in the end, I just didn't say it. (Though, in retrospect, I probably did use enough. It was about 11-13 cups and I'm pretty sure it was most of a 5 pound bag, but because I hadn't paid close enough attention to be sure, I didn't want to take chances.) Result? The most amazing challah I have ever made (ever!) with only slightly more effort than last time (because the dough was stickier) and quite possibly the best challah I have ever eaten.
